How to make spaghetti with clams
Wash the clams under running water, rubbing them, then soak them in a bowl, changing the water at least a couple of times, to remove all the sand.
Drain the clams, transfer them to a large pan and put them on the fire, with the lid on, to make them open.
Shell half of the clams being careful not to burn yourself, put the rest aside and filter the water released during cooking, in case there is still sand.
Prepare the sauce with the clams: fry the garlic and parsley in the oil, remove the garlic and add the clams.
Brown them to flavor them, then blend with the white wine and then with the filtered cooking water.
Cook the spaghetti in plenty of boiling water, drain them halfway through cooking and set aside a glass of cooking water.
Add the spaghetti with clams, season with salt, add the pepper and parsley, then cook.
