Beetroot cream recipe by of 10-10-2014 [Updated on 27-08-2018]
During my holidays in Rhodes last summer, next to the very famous tzatziki I saw a pink sauce in the refrigerated counters of the delicatessens, but I just couldn't understand what it was. These days I was reading an article on Greek cuisine and I stumbled upon the beetroot and yogurt cream with which the Greeks flavor potato salad, I looked at some photos and it was her! Well if you like beets, try this cream and it's fabulous!
How to make beetroot cream
In a blender, blend the walnuts with the garlic, oil, vinegar, salt and pepper
Add the boiled beets cut into pieces to the emulsion obtained
Blend everything until you get a cream then add the Greek yogurt
Mix until you get a firm and homogeneous cream
Put in a bowl and serve to spread on bread or to cod for boiled potatoes
