Mojito cheesecake is a dessert made up of a base of biscuits and butter covered with a delicate one cream cheese flavored with lime and mint. I think this dessert will be my sweet revelation of summer 2019. You know I love mojito. You know I love cheesecake. The question is: why hadn't I yet thought of combining them in what will be the summer dessert par excellence from now on ?! Obviously you joke (but not so much: P), but this dessert is really good, delicate and suitable for the summer period, so if you love mojito as much as I do, I highly recommend you try it and delight your friends in this way;)
For a non-alcoholic version of the mojito cheesecake, omit the rum as well, so that even the children can taste it safely. I leave you to the recipe and I send you a basin: *
How to make mojito cheesecake
First, finely chop the biscuits, add the melted butter (in the microwave or in a double boiler) and mix.
Pour the mixture onto the mold with the removable bottom and level and compact well with your hands, then leave in the fridge to rest for at least 30 minutes.
Heat the cream (in the microwave or on the stove).
Meanwhile, soak the gelatine in cold water for about 10 minutes, then squeeze it gently and melt it with the hot (but not boiling) cream.
Let it cool down.
Put the ricotta, the mascarpone, the icing sugar, the finely chopped mint, the grated lime zest, the juice of one lime and the rum in a bowl.
Work everything with the whisk until you get a smooth cream, then add the now warmed cream and mix.
Pour the mixture into the base, level and solidify in the fridge for at least 3 hours.
The mojito cheesecake is ready, you just have to decorate it with some lime wedges and mint leaves and serve it!
