Profiteroles are a dessert obtained by filling a cream or cream puff and covered with chocolate. How to make chocolate profiteroles
In a thick-bottomed saucepan, bring the water, butter and salt to a boil.
Remove the saucepan from the heat and add the flour and sugar.
Stir with a wooden spoon until a homogeneous mixture is created. Put back on the heat and continue stirring until the mixture comes off the walls.
Remove from the heat, let it cool for a few minutes and add the eggs one at a time, incorporating each egg well before adding the next.
Keep stirring until the choux pastry becomes full-bodied and does not fall off the spoon if shaken.
Line a baking sheet with parchment paper. Put the choux pastry in a pastry bag with a smooth nozzle and form well-spaced balls.
Place the cream puffs in the preheated oven and bake at 200 ° C for about 20 minutes. Remove from the oven and let cool
Whip the cream and put it in the pastry bag.
Once the puffs have cooled down, fill the puffs by inserting the nozzle of the pastry bag with the cream, making a hole on the base
Now prepare the chocolate glaze. Chop the chocolate
Heat the cream in a saucepan with the milk, once boiling add the chocolate
Mix until you get a smooth and homogeneous glaze
Allow the icing to cool, then dip the puffs one at a time in the chocolate icing.
Arrange the chocolate profiteroles on a serving plate.
Decorate the chocolate profiteroles with the remaining cream.
Keep the profiteroles in the fridge until ready to serve them.
