The recipe of bread with hemp flour it's a bit special. I begin by telling you that the hemp flour is a naturally gluten-free flour obtained from the seeds of edible hemp (hemp sativa).
Rich in fiber, protein, omega 3, omega 6 and minerals, used in small quantities will give your bread a delicate fresh and toasted aftertaste, very pleasant, but I recommend not adding too much, or you risk that your bread tastes of grass. normally it partially replaces wheat flour in an amount between 10 and 25%. How to make bread with hemp flour

Combine the 3 flours in a bowl.

Stir, then add the dissolved yeast together with the honey in a little water (taken from the total) and start kneading.

Add the salt and the remaining water and knead for at least 25 minutes, until the dough is strung.

Transfer the dough, which will be quite soft, on a floured pastry board.

Roll out the dough with floured hands to spread it into a square shape, then make the 3 folds.




Let it rest for at least 30 minutes, covered with a clean cloth, then roll out the dough again with your fingers.

Roll it up from the long side, then put it in a loaf pan (mine is 30x11 cm) lined with parchment paper.

Let rise for about 3 hours in the off oven (mine has grown a bit too much and was starting to "screscitate", so keep an eye on it).
Gently brush with a little almbume and decorate with seeds to taste.

Preheat the static oven to 220 ° C, then bake, put a saucepan full of water on the bottom of the oven, lower the temperature to 180 ° C and cook for about 30 minutes.

Let it cool before serving your hemp flour bread.
