Chestnut pancakes recipe of of 31-10-2016 [Updated on 12-02-2018]
The chestnut pancakes are a delicious dessert made with chestnut flour, the dough is fried in spoonfuls and served with a sprinkling of icing sugar. I prepared a version with the addition of raisins and pine nuts in the dough, then I accompanied the chestnut pancakes with a Ricotta Cream and the result was a truly greedy dessert. How to make chestnut pancakes
Soften the raisins in a bowl with water
In a bowl put the sugar, chestnut flour, yeast and cocoa and mix.
Then add the water and mix.
Now add the squeezed raisins and pine nuts and mix
Heat a little oil in a pan, once boiling pour the mixture by spoonfuls. Fry the pancakes a little at a time, browning them on both sides. Once ready, lift them and transfer them to a plate lined with absorbent paper.
Prepare the cream by mixing the ricotta with the icing sugar.
Then stuff alternating each pancake with a layer of ricotta cream.
Sprinkle your chestnut pancakes with icing sugar and serve.
