Banana muffins are my latest cooking experiment. To experience new flavors that are a little away from my usual tastes I have to be well-disposed: last night I saw the ripe bananas in the fridge and the almond flour that has been waiting for a lifetime to be over and I decided to try these banana muffins and almonds, super easy and super delicious indeed!
How to make banana muffins
Let's start with the usual procedure for making muffins, dividing the dry ingredients from the liquid ones.
Arrange the flour, almond flour, sugar and baking powder in a bowl and mix everything with a wooden spoon.
Aside, arrange the bananas and mash them with a fork to form a puree.
Add all the liquid ingredients to the bananas: milk, egg, softened butter and vanilla essence. Mix until you have a homogeneous mixture.
Pour the banana mixture into the flour.
Mix with a wooden spoon until it forms a homogeneous mixture.
Arrange the muffin cups in a baking dish, butter them and fill them with mixture for 3/4 of their height.
Bake the banana muffins in a preheated oven at 180 ° C and bake for about 20 minutes.
Remove from the oven the banana and almond muffins, allow them to cool, sprinkle with icing sugar and serve
