The Parisian dumplings, also called puffed gnocchi, are a French dish in which gnocchi are seasoned with mornay sauce, a sort of béchamel enriched with cheese and egg yolk, and subsequently au gratin in the oven. The dough of the gnocchi is made with a kind of choux pastry, which is then inserted into a pastry bag and pushed directly into boiling water, cutting out small pieces of dough in the shape of a dumpling.

How to make Parisian dumplings
Start preparing the mornay sauce.
Prepare a béchamel by melting the butter in a saucepan, then add the flour and mix.
Add the milk slowly, stirring constantly. Add salt, pepper and nutmeg.
Then add the gruyere, cream and egg yolk and mix until you get a smooth sauce.Now move on to the preparation of the gnocchi; pour the milk into a saucepan, add the butter, salt and nutmeg.
When the butter is melted, add the flour a little at a time.
Mix with a whisk until the mixture is smooth. Let it cool down.
Once the mixture has cooled, add the grated cheese and the eggs one at a time and knead the dough until the mixture is elastic.
Now put the mixture in a pastry bag with a wide and smooth round nozzle. Press the dough directly into a pot with boiling salted water, making the gnocchi by cutting the pieces of dough by about 3-4 cm, with the wet blade of a knife.
Cook the gnocchi until they rise to the surface, then drain them with a skimmer.
Pour a few tablespoons of mornay sauce into an ovenproof dish, add the gnocchi. Complete by adding the remaining sauce and sprinkle with Parmesan.
Bake the Parisian gnocchi in a preheated oven at 180 ° C for about 20 minutes.
Let it cool down and then serve your Parisian gnocchi
